Black to Black, Sweet Black Dessert Wine
TYPE : PASSITO NERO / Sweet Black Dessert Wine
GRAPE: 100% Merlot
REGION: Val d’Arda (Piacenza)
ALCOHOL: 14%
HARVEST: hand-picked into crates of 5 kg.
DISIDRATHING: Dried for 1 week in the sun on racks and then for about four months, hanging bunches in a ventilated, shady place without forced ventilation
VINIFICATION : Soft pressing in press, vinification in red without maceration on the skins in stainless steel vats at controlled temperature below 18 degrees.
AGING: In oak barrique for about 4 years then in bottle for about 1 year.
CHARACTERISTICS: Black Color with shades Red, Strong Perfumes of red fruits with predominance of Cherries/plums and notes of Vanille with citrus spicy and coffee, Incredible complexity and aromas. Good acidity with long persistence in mouth. Perfect density and oiliness .
TEMPERATURE: Serve at about 10 - 12 degrees.
BEST SERVED WITH: Seasoned cheeses, dark chocolates until 99% of cacao.
